Since 1991, Aarhus University (AU) conducted research that focuses on food-related consumer behaviour. AU is a research centre rooted in the social sciences, but works closely with researchers in food science and food technology, and has a long history of cooperation with food producers. 


Consumer acceptance of new food processing and production technologies has been a focus area. AU also addresses how consumer insight can be exploited in user-driven innovation in the food sector. The centre takes part in numerous collaboration projects with Danish and foreign food companies and trade organisations. AU researchers give a large number of practitioner-oriented lectures and presentations at seminars, conferences and company meetings.

AU is Leader in Work area 4 (Conceptualise improved dialogue).
